During this full day class, we offer the option to decorate a double-barrel (stacked) fruit or Madeira Christmas cake. You will learn how to adequately dowel and stack a double-barrel cake. We will prepare the relevant foundation for your sugarpaste (marzipan for fruit cakes and ganache for Madeira cakes) before creating the perfect sugarpaste covering to cover a double-depth cake to a professional standard.
The bottom tier of this 3-tier festive cake will be a dummy cake. You will learn how to create and print sheets of edible sugar which we will then use to decorate the bottom tier. We will make a selection of moulded trims and embellishments before making hand-modelled ‘baubles’ and the hand-crafted ‘fir’ wreath complete with seasonal Poinsettia, pine-cones and foliage.
Finally, we will assemble your creations onto 12 large cupcakes before adding finishing touches including leaves, stamens and piped filler-flowers to really bring your designs to life.
